Recipe: zucchini bake

It's zucchini season! This is a favorite recipe in our house and I don't think I've shared it yet.  It can be made ahead to freeze then just add the zucchini later--I think it would be better that way than freezing the zucchini.
 
I call it zucchini bake, though you don't even bake it.  It's one of those one pot meals so it is easy clean up--my favorite!
 
Ingredients:
1 lb ground beef or ground turkey
1 cup chopped onion
1/2 cup chopped green pepper
1 cup raw rice (I use brown Minute Rice)
4 cup sliced zucchini
1 1/2 cup beef broth (I use one can chicken broth)
1 large can diced tomato with juice
1 tsp salt
1 tsp oregano
1/2 tsp basil
1/4 tsp garlic powder
1/4 tsp pepper
1 cup grated cheese
 
Directions:
1. In a deep sided frying pan, brown the beef, onions, garlic, and green peppers. Drain if necessary.

2. Add seasonings, tomatoes, broth, rice, and zucchini. 


 


 
3. Cover with lid and simmer for about 20-30 minutes until rice is cooked.


4. Add cheese on top and recover so it melts, then serve! We like ours with biscuits:)
